In North Carolina a few weekends ago, I was lucky enough to purchase one
of the fabulous cookbooks offered from the Autism Society of Delaware,
by their ED, Theda Ellis. Called "Recipes of Hope".

Y'all should each buy one (or two or three, cause they're good gifts
too). I've been diligently trying a few of the recipes.
My favorites so far: (comments in parentheses are mine)
Debbie's Decadent Baked French Toast - (This is so good
and so easy it will make you want to smack your granny.)
Theda's Pasta Puttanesca - (A spicy dish named after the Italian
ladies of the night. That is, "Puttanesca", not
"Theda" is Italian for "Ladies of the Night")
Marcy's Peaches 'n Cream Pie - (Can't believe I ate the whole
thing! -Yes that's our own Marcy Kempner cooking up all of that tasty
goodness. No wonder Artie's always needing to workout!!)
Debbie's Bourbon Glazed Salmon - (NO WAY is 6 Tablespoons enough
bourbon!! Trust me, more is better. Hic. More than that ith even
better yet. Hic. Hic. )
Go out and get ya' one. Even if you're just using it see how your
own chapter might do the same.
